Barley Risotto X Li Shan Alpine Grand Cru Black Tea [ Tea Pairing ] SOIGNÉ Restaurant Seoul X SANBAOTEA Taiwan

Barley Risotto #Field #History
One of the hallmarks of Korean food is harmony and balance. Whether it’s in a single dish or an entire meal, it’s characterized by a variety of combinations of ingredients from the earth, sky, and sea to avoid one-sidedness. This dish was inspired by Korean “Tangban” (Soup & rice), which combines ingredients from the sea, land and sky, while also expressing the aesthetic of harmony that
Korean food represents through the combination of vegetables, grains, and meats.

A light barley risotto cooked in chicken broth is mixed with bean sprouts and bamboo shoots from the earth, and topped with beef brisket, lobster, and octopus to capture the philosophy of Korean food, where all elements are balanced, but with swaneeye’s own modern interpretation.

Li Shan Alpine Grand Cru Black Tea

Li Mountain, towering over 2600 meters above sea level, provides a cold and humid environment ideal for growing Li Shan tea trees. This unique high-mountain black tea from Taiwan features soft leaves and exceptional fruity fragrance and flavor.

The tea offers a floral and fruity profile with honey notes, complemented by a sweet aroma of ripe fruit.
It has a delightful sweet aftertaste and is bright red, clear, and lustrous in appearance.

【Tea Pairing Tips】
Li-Shan Black tea, the delicate tannins, and the beef brisket in the soup and rice are like long-awaited close friends. The aroma of flowers and fruits blends with the soft and sweet lobster, and the caramel aroma and barley aroma in the finish are still lingering.

When Seoul's two-star Michelin chef Jun Lee's exquisite culinary skills meet Taiwan's fine tea culture, the result is not merely a collision of East Asian food traditions, but a luxurious feast for the palate and senses.

Chef Jun Lee is renowned for his precise techniques and unique use of ingredients, with a focus on the layers and balance of each dish.

Sanbaotang's premium Taiwanese teas are celebrated for their rich flavor profiles and varying degrees of oxidation and roasting. Whether it's fresh mountain tea, mellow oolong, or delicate and elegant black tea, each can beautifully showcase the aroma and sweetness of the tea in a delicate performance.

This cross-border collaboration may spark a highly creative dialogue regarding taste. It transcends a simple pairing of food and tea; instead, it delves into a profound exploration of culture, craftsmanship, and flavor, further expanding the boundaries of culinary artistry.
