Assam black tea is a staple in our daily lives, widely used in breakfast establishments. But what exactly is “Assam Black Tea”? Originating from the Assam region of northeastern India, situated at the foothills of the Himalayas, this area is one of the largest tea-producing regions in the world. Traditionally, Assam black tea is enjoyed with milk as a breakfast tea and serves as the foundation for English Breakfast blends. The strong sunlight and abundant rainfall in this region promote the vigorous growth of the tropical Assam large-leaved tea plants. The highest quality tea leaves are harvested from June to July, while the autumn harvest in October and November is particularly aromatic. The tea leaves are elongated and brownish, yielding a deep reddish-brown infusion that boasts delicate malty and floral notes, making it an ideal choice for winter drinking.

Brewing Instructions
For brewing, the recommended tea-to-water ratio is 1 gram of tea leaves to 50 ml of water. Adjust according to your preference for strength. Use water heated to 90°C and steep for approximately 3 minutes.

  • For no ice: 100 grams can brew 5000 to 6000 cc of water.
  • For ice after brewing: 120 grams can brew 5000 cc of water.

  1. Choose tea from a certified supplier with SGS approval, ensuring no pesticide residues and no additives. Be cautious of low-quality teas that may contain synthetic flavors from questionable sources.
  2. The water used for brewing and the ice from the ice machine should both be filtered and sterilized.
  3. After brewing the tea leaves with hot water, immediately add hygienic ice to chill, as the aroma and flavor can change with heat. Rapid cooling preserves the optimal taste and reduces the risk of bacterial growth associated with standing at room temperature.
