Fu Shou Shan Alpine Grand Cru Oolong Tea (also known as Heaven Pool oolong) is a very rare premium oolong tea from Fu Shou Shan (Fushoushan) in Li Shan area. Farm is located between Mt. Hehuan and Mt. Snow at altitude 2500-2600 m.

Fu Shou Shan is the second highest peak in the Li Shan Range, exceeding Li Shan. There is the Heaven Pool on the top of the mountain where there is water all year long and tea is named from its name. This tea plantation is one of the highest tea plantation over the world has the road land mark 101K.

Due to its high altitude and northern latitude, Fu Shou Shan's harvest begins much later than other oolong teas. At altitude 2600 meters, strong but short sun exposure in the morning produces intense flavor compounds, while cooler mist-enshrouded afternoons allow the plant to store those compounds.

This is very special for its taste and limited kind of oolong.

Leaves: delicately hand-rolled into small, green-yellow coloured balls.

Taste
Liquor is greenish and clear, aroma is wonderful with sweet honey notes. There are two types of taste - light and strong, which depends on brewing time.

When you use normal brewing time, you get very light and sweet oolong with very reach and sweet aftertaste. But if brewing time is more, color becomes deep, aroma and taste are different – more fruity and tropical.

Brewing
You can use any kind of tea pot, but clay tea pot suits much better.

Warm up the tea pot with the boiling water, put 3 grams of tea, and pour small amount of the boiling water into the tea and pour out, then pour 250 ml of boiling water and cover tea pot for three minutes before serving.

Boiling temperature – 85-95°C (185-203°F). You can use this amount of tea 3 to 4 times.

The tea leaves come unrolled for full flavor.

Additional information
This is one of the traditional ways of brewing. Depending on individual gustatory preferences you can you can vary brewing time from 35s to 5 minutes.

You can also use Taiwanese traditional way of brewing - spilling, using Gaiwan and brew for 3-5 second each time.

Please note, that it is natural tea with high content of active elements, including caffeine, and minerals and some unusual feelings could appear. In that case we recommend decrease quantity of dry leaves and brewing time.
